FISH, VEGETABLES AND QUINOA

This recipe for a fish, vegetable and quinoa dish is very easy to make and you can use a variety of vegetables and an assortment of fish.  It all depends on your taste buds.  I find sometimes that I want to dress up a piece of cod or salmon and combine it with other foods.

Quinoa product that I buy at Costco.



Onions, garlic, celery and pepper being saute in a large pan.

Three garden tomatoes will be added to the pan.

I used 400 grams of cod.

With only a few minutes left to cook, I added enough spinach to cover the vegetables and fish. 

Ready to serve.

INGREDIENTS:

About a pound of cod or other fish, cut into serving pieces
2 tbsp olive oil
1 onion, chopped
1 clove garlic, minced
1/2 pepper, chopped
1 stalk of celery, chopped
3 fresh tomatoes, chopped into quarters or smaller pieces
2 to 3 big handfuls of fresh spinach
1 cup uncooked quinoa
2 cups of water

DIRECTIONS:

Cook the quinoa in the two cups of water according to the directions on the package.  If you don't have directions, heat the water and quinoa in a medium size pot until it boils.  Reduce heat to a simmer for 15 minutes.  Remove from the burner and let it sit for 5 minutes before serving.  

In a large frying or saute pan, heat the oil on medium heat and then add the onion, garlic. celery and pepper.  Saute for about 5 minutes.   Add the chopped tomatoes and cook for another 3 minutes.  Add the fish and layer it over the vegetables.  Cover and cook on low heat for 10 to 12 minutes.  A few minutes before it is done, add the spinach to the pan.  Serve with the quinoa.  The recipe serves about 3 to 4 people.
