TURKEY BREAST WITH MAPLE BALSAMIC GLAZE

I like eating turkey but don't eat it as often as chicken because of the way it can be sold - you need to buy the whole bird.  Having said that, some stores sell turkey breast, drumsticks and ground turkey. I have bought turkey breasts and fillets and enjoy making this maple balsamic graze.  It is an easy recipe to make and the glaze can also be used for chicken.  

I have basted some of the glaze to these turkey fillets and kept some back to baste half way through the baking process.  Lining the pan with tin foil is much easier when you have to clean up the pan afterwards.

I slice the meat into pieces before serving.
TURKEY BREAST WITH MAPLE BALSAMIC GLAZE

INGREDIENTS:

1 tbsp balsamic vinegar
1 tbsp maple syrup
1 tbsp butter
½ tbsp Dijon mustard
1 tsp fresh rosemary or ½ tsp dried
sprinkle of salt and pepper
1 kg turkey breast or 3 turkey breast fillets

DIRECTIONS”

Heat the oven to 350 degrees F.  In a small saucepan, heat the vinegar, maple syrup, butter, mustard, rosemary, salt and pepper over low heat until the butter is melted.   Place the turkey in a foil lined shallow pan and brush the turkey with the basting sauce.  Don’t use all of the sauce.  Bake uncovered and after the first half hour, baste the meat with the remaining glaze.  Bake for about 50 to 60 minutes.  Remove from pan and slice the meat for serving.  Serves about 3 to 4 people.
